Quinta Senhora do Rosário fruit: Touriga Franca (25%), Tinta Roriz (25%), Touriga Nacional (5%), Tinto Cão (5%), Tinta Barroca (20%), others (20%). Vines are 8 to 14 years old. Totally destemmed grapes, followed by a slow fermentation with temperature control up to 28 ºC. Soft filtration. TA 4.35 g/l, pH 3.42, RS 111 g/l. Pair with: fruits, nuts and cheeses, eg Manchego. More tawny in colour than their Special Reserve Tawny but still some red in the colour. Fox red. The spirit is more subdued here than on the Special Reserve and has less immediate impact. Less red fruit and more orange marmalade – the really mature dark sort. Lots of sweet spice and more obvious oak sweetness and spice. On the palate, dried apricots and a nutty complexity, more dried fruits but not raisiny. The tannins are silkier than on the Special Reserve and the whole is more elegant and complex. Really long for a 10 Year Old and a lovely bite of tangy freshness on the finish.
